With Thanksgiving coming up and I polled our non-Atkins diet guests and they want mashed potatoes. Regular mashed potatoes have 31.5 carbs per cup. Most people will not eat a cup with so many other things on the holiday table. The average serving of one half cup would be about 16 carbs. This is one reason I decided to try out LC version.
As you can see from the back, that you need to cook an entire head of cauliflower before whipping the potato mixture in. I cooked the cauliflower in the microwave until soft. I beat it until it had a potato-like consistency. It actually tasted very good at this stage. I've served served mashed cauliflower before as a substitute for potatoes.
I then made the mix using boiling water, butter, cream before adding the the two items together. Once blended, it had an unappealing chalk-like texture resembling instant potatoes. The package encourages you to add bacon, parsley, chives, and sour cream, even cheese. I think the idea is to disguise the taste.
The texture was thin and runny. I refrigerated the results hoping for better results the next day.

My results didn't resemble the package photo. Unfortunately, it wasn't a hit and the $4.98 I spent on the LC Mashed Potatoes could have been better spent. According to the mix, two tablespoons is considered a serving. It is also 5 carbs. It makes me wonder what other items I can serve instead of potatoes.

*Sauteed Spinach
*Roasted Turnips with Parmesan
* Carrot fries ( Cut baby carrots in half. Spray with butter cooking spray and baked in oven @ 400 until tender or crisp depending on your preference.)
* Steamed Cauliflower is still a go to. ( It can be fancied up with sour cream, chives, or cheese.)
Summary: I'll be planning on using something else for Thanksgiving.
