This is the end result of the Raspberry Scone Mix by LC foods. Technically, it made ten 4" wide scones. I didn't think there was fruit in the mix. There was. I bought black raspberries to put into it. This stretched out the servings. I added an extra egg because I usually do in baking. There is no real reason too.
You can see that each scone is 1.5 carbs, which makes a nice mid-morning snack. I probably bumped that up to 2 carbs by adding the berries. The taste is very similar to bakery or tea house scones. I liked this idea so much I tried using another baking product to replicate this mix without success. My attempt was to get around the LC price of $8.98 per mix. If I had made the product as directed, then I would have had a roll-able dough and thinner scones, which would equal more scones. I ended up dropping mine on the pan with a measuring cup, which explains their thickness.
Conclusion: The scone had a natural taste, especially with the inclusion of fresh berries. It had between a biscuit and pastry texture, with a slightly sweet taste, and a medium density. Recipe was easy to prepare. It took eight minutes from bowl to oven. Most LC products I bake on the top oven rack, which seems to work best. Overall, it was a pleasant experience. The price is a bit high, but I consider scones an every now and then indulgence. Would recommend. Occasionally, I want something bread-like, this satisfies the craving without going off the wagon.
The finished product freezes well too. As with many fresh baked items, they need to be used immediately. Freezing them in baggies allows you to use them when you wish. Happy Baking.
