Some of you are thinking the title mentioned muffins, not bread. True, but I used the pumpkin bread mix. One bread mix made sixteen average size muffins. I like muffins because it is easier to tell when they are done. It also allows me to portion them out into baggies and freeze them.
Here is the beginning product. I stirred in a half cup of walnuts too. The finished product isn't overly sweet, but is a nice seasonal change. The texture is a bit heavy, but digestible. It requires six egg whites, which is a bit much. (I saved the yolks and used them in meatloaf the next day.)
It is $7.98 a package, which makes it a seasonal treat for sure. I'll probably get another package or two before winter sets in. I would recommend it.

I set the oven at 400 degrees since I made muffins and used the top rack. I set the timer for 18 minutes, which resulted in done muffins, but not dry. I also sampled the smallest one to be sure.
