Today’s blog is about the Envy Spiral Slicer. I got mine off Ebay for $10 with free shipping. I’ve seen it sold in home goods stores, Amazon, and on television. Being the frugal type, I went directly to the source. The slicer is good for making carrots, zucchini or cucumbers into long Julienne strands like pasta. The box states any firm vegetable will work.
As you know pasta is carb heavy and those extra carbs work their way into your fat cells as opposed to giving you immense energy as most like to believe. Spaghetti squash was my usual alternative, but it can be expensive and difficult to find during some seasons.
I used two eight-inch zucchinis for my trial run. I didn’t quite have the motion right and ended up with a few straws. I figured out that I either have to be turning the device or the squash to get the long spirals of squash. Once I did it right, I created a large plate of vegetable pasta.
Don’t boil your veggie pasta as you would normal pasta. Sauté it in a skillet with a little olive oil and sea salt until warm. Serve immediately with red pasta or Alfredo sauce.
Silver Palate, which is available at Kroger, makes sugar free sauce that is only five carbs. Alfredo sauce is surprisingly low in carbs usually between 2-4 carbs depending on the brand.
Summary: Worked well once I figured it out. It is a sturdy device, which can go into the dishwasher too. It is easier to spiral the squash if you leave the peeling on because it makes it firmer. There is no noticeable taste difference with the skin on.
