Have you found yourself reading labels to find hidden sugar in food? Salsa is something that shouldn't have sugar in it, but you'd be surprised how many do. Since I'm a gardener, I end up with an excess of tomatoes at the end of the summer. Here's the mix I used.
As you can see, the prepared salsa only has one carb per two tablespoon serving. I end up using it as salsa, topping for meatlof and eggs too.
Summary: This takes about one hour to prepare which includes dicing tomatoes, one yellow onion, half dozen jalepenos peppers and one poblano pepper. I like the fact I know everything that goes into the salsa. It's actually very, very good. It isn't a cooked salsa, which makes it fresher and crisper. You're able to freeze the surplus too.
